 The Semillon variety is very susceptible to Botrytis.

 The Botry-what???

 Botrytis cinerea, or noble rot, is a very important fungus for the production of certain sweet wines, such as those from Sauternes or Loupiac. It thrives when conditions are favorable, with fog in the morning and sunshine in the afternoon. This fungus attacks the grapes by causing some of their water to evaporate, which concentrates the sugar and aromas. The grapes then become very sweet, perfect for creating luscious wines with rich flavors of honey, dried fruit, and spices.
