Gamay is often vinified using the carbonic maceration method, especially for Beaujolais Nouveau, a young and fresh wine celebrated every year in November. Wines made from Gamay are appreciated for their approachability, freshness, and drink-now style. However, certain Beaujolais crus can age beautifully and develop more complex aromas.
