 Gamay is often vinified using the carbonic maceration method, particularly for Beaujolais Nouveau, a young and fresh wine celebrated every November. Wines made from Gamay are generally appreciated for their approachability, freshness, and ability to be enjoyed young. However, some Beaujolais crus can age and develop more complex aromas.
